Chipotle & Maple BBQ Pork Belly Lollipops

If you like things a little spicier, you can serve with your favourite Sunshine Sauce hot sauce (we like it with The OG) on the side as an extra little dipping sauce! Delish
now, let’s fire up the smoker and get into it!
Food you’ll need:
12 x metal skewers
Approx 2kg skin on pork belly
1x bottle Chipotle & Maple BBQ Sauce
1 tbsp sea salt
1 tbsp brown sugar
1 tbsp garlic powder
1 tbsp onion powder
2 tbsp smoked paprika
1 tsp ground cumin
1 tsp black pepper
What to do:
Heat your barbecue or smoker to roughly 140℃.
Combine smoked paprika, onion powder, garlic powder, cumin, brown sugar, salt and pepper in a bowl and mix well. Set aside.
Grab your pork belly and using a sharp knife, slice the pork skin away from the meat. Then slice the pork belly meat into strips approximately the width of a $2 coin. Coat the strips in the spice rub and roll into a flat round circle securing with a metal skewer straight through the middle. Place in the fridge until the smoker is ready.
Low & slow baby! Place the pork lollipops into the barbecue or smoker for around 75 mins or so, until the internal temp. reaches 65℃.
While the lollipops are barbecuing away, season up the pork skin with sea salt, and throw it in your air fryer for around 25 mins or so. Once the pork crackling is nice and crispy, let it cool down, then chop it up roughly into a crumble.
Remove lollipops from the smoker and place onto a baking tray. Brush both sides with Chipotle & Maple BBQ sauce, then wrap with foil and return to smoker for approx. 1 hr.
Remove from smoker, unwrap and brush generously with remaining sauce. Return to smoker uncovered for approx. 10 or 15 mins or until nice & sticky.
Take them out of the smoker & rest for 10 mins. Serve with the yummy chopped up cracking and enjoy!
